Viticulture & Vinification Notes: The fruit is hand-harvested from vineyards featuring 10 year old vines plants in soils rich in limestone, sand and limestone. In the winery the stalks are removed from the bunches and the grapes are pressed and cold-soaked. Yeast is added to initiate fermentation and left to soak afterwards. The wine is barrel aged for 24 months and then bottled where it is left to age for another 12 months before being released into the market. |
