Z’Ivo Pinot Noir Willamette Valley 2006

Varietal: 100% Pinot Noir

Viticulture & Vinification Notes: Grapes were 100% destemmed before wild yeast fermented in 1.3 ton bins. The wine required minimal handling and allowed wild yeasts to finish fermentation without difficulty after 1 week of cold soaking. The wine was stirred on the lees every 2 weeks. Aged in 30% new wood for 10 months.

Notes From The Winemaker: Highly extracted with a mix of red cherry, black cherry, and black raspberry flavors balanced with smoky, toasty tones and spice. Cellaring until 2007 and beyond will allow the full expression of the fruit. Soft tannins, fine grained and mature, shedding the youthful qualities it had always shown before.
